1. Beat sugar, applesauce, butter and molasses together at medium speed with an electric mixer until well blended.
2. Stir together flour, ginger, cinnamon, soda and salt in medium bowl. Combine buttermilk and eggs in a separate bowl. Add both mixtures alternately to butter mixture, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Pour batter into a lightly greased 10-inch cast iron skillet.
3. Bake at 325 degrees F for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Serve with whipped cream, if desired.
