Oven Roasted Sausage with Sweet Potatoes and Grapes

1. Preheat oven to 400 degrees F. Line two baking sheets with foil and spray with cooking spray. Set aside.
2. In a large bowl combine sweet potatoes, sausage, and grapes and mix with your hands until well combined. Pour half the Balsamic Vinaigrette over bowl and mix together well, adding more as needed until sausage mixture is well coated with dressing. (You don't want it dripping, so add slowly.)
3. Pour mixture into the two pans. Bake at 400 degrees F for 30 to 35 minutes. After 15 minutes, stir to turn mixture over so it will caramelize evenly. Dish is done when sweet potatoes can be easily pierced with a fork. Serve warm with a green salad. (Salad not included in nutritional analysis).
