Herbed Spring Greens with Shiitake Saute

1. Prepare mushrooms. Remove stems and discard (or save to use for broth). Slice mushroom caps thinly. In a large nonstick skillet, heat oil over medium-high heat. Add mushrooms and sauté until softened and slightly browned, approximately 5 minutes. Remove mushrooms from heat and set aside.
2. Toss greens with fresh basil and balsamic vinaigrette and divide among four salad plates. Top each serving with a quarter of the sautéed mushrooms. Sprinkle a little bit of the salt and add a grinding of fresh pepper over each plate. Top with a few shavings of Parmesan cheese and serve immediately.

2 Tbs Hannaford Inspirations Basil Dipping Oil
1 pkg Hannaford Inspirations Spring Mix Salad
2 Tbs Fresh basil, cut into thin strips
6 Tbs Hannaford Inspirations Balsamic Vinaigrette
1/4 tsp Kosher salt
4 ea Freshly black pepper grindings
1 oz Parmesan cheese, shaved
