Curry Grilled Chicken Kabobs

1. Place the chicken in a bowl; sprinkle with oil, ginger, garlic, curry powder, salt and red pepper, and stir to coat. Let chicken marinate in the refrigerator, covered, for at least 1 hour or as long as overnight, turning several times.
2. On 8 (6 to 8 inch) bamboo or metal skewers, alternate cubes of chicken, mushrooms, peppers and onions. Brush vegetables with curry marinade. (The kabobs can be prepared to this stage several hours ahead and refrigerated, covered.) Preheat a hinged contact grill to high or heat a broiler. Cook 5 to 7 minutes in a contact grill, or 3 minutes per side under the broiler. Serve kabobs with cucumber raita, if desired.

3/4 tsp Coarse salt
1/4 tsp Ground red pepper
8 oz Fresh small mushrooms
1 ea Fresh yellow bell peppers, cut in 1" pieces
1/2 ea Medium onion, peeled, cut into 1" squares
