Spiced Pear Cranberry Cake

1. Preheat oven to 350°F. Spray a 9-inch
round cake pan with vegetable cooking spray.

2. In a medium bowl, mix pears with
lemon zest, lemon juice, ginger, and cinnamon.
Set aside.

3. In a medium saucepan, melt the butter.
Remove from heat and cool 5 minutes.
Whisk in the milk and eggs.

4. In a large mixing bowl, combine flour,
baking powder, baking soda, sugar, and salt
and mix well. Add the butter mixture and
stir to combine. Gently stir in the cranberries
and the pear mixture.

5. Pour batter into prepared pan. Bake at
350°F for 35 to 40 minutes, until surface
is pale gold and a toothpick inserted in the
center comes out clean. Cool 5 minutes on
a wire rack. Carefully transfer to a serving
plate. Serve warm or at room temperature,
garnished with whipped cream if desired.
