Lighter Blue Cheese Mashed Potatoes

1. Place potatoes in a large saucepan and
cover with cold water by 1 inch. Bring
to a boil over high heat, then lower to
medium high and cook until potatoes
are very tender, about 20 minutes.
Drain well.

2. Return potatoes to pan. Mash until
smooth with a potato masher or large fork
(don’t purée in a food processor, as that can make potatoes gummy). Add garlic, blue
cheese dressing, sour cream, rosemary, salt,
pepper, and 2 Tbsp. of the blue cheese. Mix
well to combine.

3. Transfer mashed potatoes to a serving
bowl. Garnish with remaining 2 Tbsp. blue
cheese and parsley. Serve warm.
