Use your favorite Halloween cookie cutters for the party - pumpkins, ghosts, or bats. This recipe also works as easy refrigerator slice-and-bake cookies - the round shape is just right for the pumpkin theme.

What Kids Can Do
* Turn mixer on and off with supervision.
* Measure and sift dry ingredients.
* Wrap dough in plastic wrap.
* Roll out dough and use cookie cutters.
* Cut slice-and-bake cookies.

1. In a large mixing bowl, use an electric mixer to beat butter and sugar together until pale and creamy, about 3 minutes. Add egg and vanilla extract and beat until combined.
2. Place flour, baking powder, and salt in a sifter and sift over butter mixture. On low speed, beat just until the flour is incorporated.
3. Halve the dough and flatten each half into a disk shape. Or, for slice-and-bake cookies, form dough into two cylinders, each about 2 inches long. Wrap in plastic wrap or waxed paper and refrigerate at least 1 hour or overnight.
4. Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper.
5. For cut-out cookies, lightly sprinkle the dough with flour and roll one portion at a time to a thickness of 1/4-inch between two pieces of parchment or waxed paper (keep the second disk refrigerated). Use cookie cutters to press out shapes. Use a thin metal spatula to transfer cookies to sheet. For slice-and-bake cookies, slice the roll 1/4 inch thick and place slices on sheets 1/2 inch apart. Sprinkle with colored sugar and sprinkles if desired, or leave plain for frosting.
6. Bake cookies at 400 degrees for 6 to 7 minutes until lust golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely before decorating.
