What Kids Can Do
* Line muffin pans with liners and spray with cooking spray.
* Melt butter in microwave.
* Turn mixer on and off with supervision.
* Measure and add dry ingredients.
* Divide batter among muffin cups.

1. Preheat oven to 350 degrees. Spray a 12-cup muffin pan with cooking spray. Insert and spray paper liners.
2. In a large bowl, combine butter, sugar, brown sugar, and molasses. Use an electric mixer on high to mix until smooth, about 1 minute. Add egg and buttermilk, and mix until blended, about 1 minute. Alternatively, use a wooden spoon to mix until thoroughly blended.
3. In a medium bowl, sift or whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves. Add to butter mixture and mix with a wooden spoon or on low speed just until all the flour is incorporated. Do not overmix.
4. Use a 1/4 cup measuring cup to scoop batter into prepared muffin pans. Bake at 350 degrees for 16 to 18 minutes, until the surface springs back when you touch it lightly and a tester comes out clean. Let cool in pan 5 minutes, then remove to a wire rack to finish cooling, about 15 minutes. When cool, frost and decorate.

Note: Edible decorations are a fun addition.
